Abstract

This study was aimed to determined the effect of concentrated lime (Citrus Amblycarpa) and kaffir lime leaves (Citrus hystrix) on the organoleptic value the goat meatballs. This study was conducted on 10-15 June 2013 in the Laboratory of Animal Products Technology, Faculty of Animal Husbandry, University of Mataram. The materials used were ± 2 kg goat meat for making meatballs, 1% lime leaves, kaffir lime leaves 1%, and a mixture of lime leaves and kaffir lime leaves 0.5% to increase the aroma of the meatballs. Observed variables consisted of pH, Cooking Losses, and Water Holding capacity, for fresh meat and Organoleptic value for meatballs. The study was designed based on completely randomized design (CRD) with three treatments and three replications, (T1 1% lime leaves, T2 kaffir lime leaves 1%, and T3 0.5% mixed lime leaves and kaffir lime leaves ), while T0 0% for control. The data obtained were analyzed using the Statistical Analysis System (SAS) . The difference between the treatments were analyzed with Duncant Multiple Range Test. The results showed that the physical properties of fresh goat meat has an average of pH value 6.7; shrinkage cooking 13,9; and water holding capacity 61.78; still meet the standards. The results showed that the use of lime leaves and kaffir lime leaves were significantly different on ( P < 0.05 ) on treatment color and overall. Aroma and firmness not significantly different ( P > 0.05) in each treatment. It can be concluded that the goat meatballs that without lime leaves and kaffir lime leaves were preferred by the panelists.
