Abstract
Formaldehyde or formalin usage in food was prohibited in Indonesia based on Regulation of Minister of Health number 722/Menkes/Per/IX/88, however, in fact formalin is remain using as food preserver in several food including meatballs in order to improve superficial appearence or performance, texture and shelf life. The aim of this research was to analyse whether the meatballs which commercially distributed in Municipal of Mataram contained formalin. Research was conducted at Laboratory of Animal Product Processing Technology, Faculty of Animal Science, The University of Mataram on 20th to 30th June 2016. The detection of formalin content was using Formalin tool kit in order to analyse 42 meatball samples. Material of this research was obtained from meatball merchants whom owned permanent stall in Mataram. The method using to obtained data was free random sampling technique and analyse with descriptive method. The final result obtained none of the 42 samples were contained formalin or formaldehyde.
