Abstract

This aims of research to determine the effect of the level of use of pineapple extract (Ananas comosus) on the physical properties and structure description of the culled laying hens. Physical data collection method was carried out experimentally in the Animal Husbandry Product Processing Technology Laboratory while the structural picture was carried out using the microtechnical method observed on a binocular and digital microscope at the Biology Laboratory of the Faculty of Mathematics and Natural Sciences. The physical properties test contains the value of cooking loss, water holding capacity (WHC), pH, and shearforce. Data on the physical properties of meat were analyzed using analysis of variance (anova) based on a Completely Randomized Design (CRD) in a unidirectional pattern with 4 treatments and 3 replications. The results of the anova showed that the addition of pineapple fruit extracts with different concentrations in culled laying hens was highly significant (P <0.01) on cooking loss and the WHC of meat and significantly (P <0.05) on meat pH, and no significant effect (P> 0.05) on shearforce. Cooked shrinkage values ranged from 35.00% - 44.60%, WHC ranged from 23.85% - 38.08%, pH range from 5.63 - 5.90, and the shearforce range from 0.90 - 1.36 kg / cm2. Observation result of the structure of the meat shows that the higher the concentration of pineapple extract used for soaking the culled laying hens, the wider the connective tissue and muscle fibers.
