Abstract
During the last five years, especially at the period of economic crisis, many efforts have been performed to increase the productivity of land as well as to promote diversification of food crops (including soybean) in order to achieve the self sufficiency target. Little attention was paid to improve product quality which in turn reducing the potential for value added and import substitution. This research was aimed at determining factors influencing the price and quality of soybean for tahu and tempe factories, which are the major consumer of soybean in Mataram. Data were collected from 39 samples, selected randomly, comprised of 20 tahu and 19 tempe factories. The result showed that: (i) Factors determining the price and quality of soybean for tahu and tempe factories were grain with other colors, damaged grain, shriveled grain, type and thickness of grains; (ii) The model did not detect the presence of heteroscedasticity despite there was indication of autocorrelation; (iii) Testing on the structural stability of the model indicated that factors influencing the price and quality of soybean were different between tahu and tempe factories; (iv) The dominant characteristics which provide negative impact for the tahu factories were the present of grain with other color, and grain type, while the dominant yellow color had a positive impact; (v) For the tempe factories the presence of grain with other color once again together with damaged grain showed negative impact on its price and quality but the grain thickness contributed positive impact.
