Abstract

The aims of this reseach was to investigate the effect of temperature and time of frying using vacuum frying system, in order to produce good quality of mango chips based on the chemical and organoleptic characteristics of the product. The experimental design used was Randomize Completely Block Design with two factors including temperature of vacuum frying (85 ̊ C, 90 ̊ C and 95 ̊ C) and time of frying (35 and 45 minutes). Each of the two factors was combined and obtained 6 combinated treatments and repeated three times. The parameters to be observed were moisture content, ash content, color, flavor, texture and taste. The data were analysed by analysis of variance at 5% confidence level using Co-Stat software and continued using Duncan’s Multipels Range Test at the same level. The results showed that the interaction of temperature and vacuum frying time gave significant different effect to all parameters (chemical and organoleptic). The temperature treatment resulted in significant different effect on moisture content, flavor, taste and textur, but not significant different on ash content and color. The time of frying treatment gave the significant different effect to moisture content, taste and texture but not significant different effect to ash content, color and flavor. Frying temperature treatment of 95 ̊ C and the time of frying 35 minutes resulted in the best quality of mango chips based on moisture content (4,72%), ash content (1,67%), color, flavor, taste and texture of mango chips that were preferred by the panelists.
